How good?

So good, Steve Wynn just decided to implement a Vegan-friendly policy in every restaurant at Wynn and Encore Las Vegas.

Each restaurant now has a vegan-friendly menu with items like STRATTA‘s whole wheat pasta primavera and watermelon gazpacho at the Country Club.

The tofu carpaccio at SWITCH is a light, summery dish while the heirloom and melon Caprese salad at Botero is a bit heartier, full of chunks of watermelon, ripe tomato and tofu.

At Bartolotta, Ristorante di Mare, the vegan menu has a few highlights. A savory arugula salad with tender porcini mushrooms is light and refreshing. For a heartier dish, try the farro risotto. A vegan take on classic risotto, the farro (a dense, chewy grain with a nutty flavor) gives the risotto a little bite while still having a creamy texture. The risotto is served with mushrooms and Tuscan kale.

These delicious options are now available at Wynn and Encore Las Vegas.
